REPORT FROM THE HOBOKEN LOW ROLLERS ASSOCIATION:
zach and I threw down last night and brewed 12 gallons of the lighter
beer from the Dec 30th party.
its a pale ale with a bit of hops. not quite a full on IPA but close
at 30 IBU’s
no surprise it took longer than expected. i went to bed about 4:45am.
and i’ll give the new 70qt cooler/mash tun a grade of B cuz although
the taste was great i think the mash temp was a bit too low.
and the efficiency was about the same as my ghetto method.
also the copper manifold seemed to slip loose so i think that cost us
a few points on the gravity as well. (see last pic)
maybe we have to sweat some of that together with solder to hold it.
also trying to figure out how it came out so dark. i am wondering if
maybe something was mislabeled at the whole foods. like maybe the 60L
was really 120L or some nonsense.
also didnt help that the yeast i pitched into it came out of the black IPA.
all that was real dark when it went in. you could see a black circle
in the center of the beer before it mixed.
i think next time we are gonna add a bit more grain, brew a 12 gallon
batch and then brew a six gallon “little” beer with the last runnings
for a total of 18 gals.
this time the gravity of the third runnings was 1.028 so that should
be enough to make a light beer with 2.5-3% abv.

brewed again last night.
saison de noel with grains of paradise. SG 1.061
took the third runnings from the mash tun and made a little beer
starting at 1.018
which should come under 2% alcohol.
i added to it: sarsaparilla, half a dozen kumquats, licorice, cloves,
grains of paradise. 5g Mt Hood hops, nutmeg
it was pretty damn tasty. i am def getting more sarsaparilla for a
future root beer. 2oz isnt enough for a whole batch.
then i threw it on top of the farmhouse yeast (belgian)
thats 22 gallons in 2 days. its all got krausen
